These cookies are very simple to make with few ingredients and method steps. They are rich, chewy and filled with gooey dark chocolate chunks. Dark chocolate is my favourite as it has a great cocao flavour, but any chocolate will work just as well. I adapted this recipe from the new Deliciously Ella app. I love to have these as a mid-afternoon snack.
110g spelt flour
1 tsp bicarbonate of soda
1.5 tbsp cacao powder
3 large squares of dark chocolate (or a handful of chocolate chips)
4 tbsp of plant-based milk (oat, almond or rice milk work really well)
2 tbsp coconut oil (melted)
1/2 tsp ground cinnamon (optional)
1- Preheat the oven to 180c, fan setting and line a baking tray with grease proof paper.
2 – Mix all of the ingredients together expect the dark chocolate.
3 – Roll the dough into cookie shapes, place on the lined tray and then slightly flatten down.
4 – Break up the dark chocolate into smaller chunks, pressing them into the top of the cookies.
5 – Bake for 10 minutes until cooked through.
6 – Remove from the oven and enjoy!
